Recipe: Carmelized Onion and Goat Cheese Tartlets

Carmelized Onion and Goat Cheese Tartlets
Yields: 8-10 tartlets
Directions:
Let 1 frozen puff pastry sheet sit at room temperature for about 30 mins.
Preheat over to 375 degrees
Melt 2 Tbsp unsalted butter in a saucepan over medium heat. Add 1 yellow thinly slice onion and cook until translucent, about 5-7 minutes. Add a few pinches of salt.
Add 2 Tbsp brown sugar and 2-3 Tbsp balsamic vinegar to the onions. Keep stirring to ensure even cooking. The onions should caramelize in about 3-5 minutes. Remove from heat.
Roll the puff pastry out to about 1/2 inch thickness.
Using a ring mold (or rim of a cup), cut out at least 6 round shapes from the puff pastry. Use a smaller ring mold or cup rim to make a gentle indentation on the round puff pastry.
Lightly beat 1 large egg with 1 Tbsp water (for egg wash) and wash the outer border of the puff pastry. Use a fork to crimp the center.
Add the caramelized onions to the center of the puff pastry rounds. Then top the onions with a small handful of goat cheese crumbles.
Bake in the oven at 375 degrees for about 30 minutes. Remove from the oven and garnish with honey, arugula, balsamic glaze, black pepper or anything you would like!
