Recipe: Toffee Butter Cupcakes

You won’t be able to eat just one of these ridiculously delicious Toffee Butter Cupcakes! I am personally not a fan of overly sweet cupcakes and these are not too sweet but extra fluffy. These are great for a birthday or dinner party and be sure to make extra so you have the perfect rollover breakfast with coffee. This recipe is brought to you by Liv’s on 2nd Pastry Chef Maddi where you can find a version on their dessert menu paired with vanilla bean ice cream. Trust me, it’s worth every calorie! Toffee Butter Cupcakes

yields approx. 12 cupcakes

Directions

  1. Cupcakes- Preheat oven to 350F. In a sauce pan, boil 1.5 cups water with 3/4 cup of butter. Then, in a blender add in 4 cups of pitted dates and set aside. Once the water is boiling and butter is fully melted, pour mixture over the dates in the blender and blend. Once a thick date paste is formed and smooth, fold in 2tsps baking soda while it’s still hot and let it rest and start to rise up. In a large mixing bowl whisk together 6 eggs, 2.5 cups brown sugar and 1tsp vanilla extract. Whisk in date paste and then sift in 2 cups of AP flour and whisk until smooth. Pour batter into cupcake lined baking tin. Bake for approx. 20 mins. Cool Completely before filling and icing.

  2. Toffee Sauce- melt 1 cup bof butter and then whisk in 1 cup of white sugar followed by 1 cup of heavy cream. Continually whisk until it starts to thicken a bit. (It will thicken a lot once cooled). Add in vanilla and salt to taste.

  3. After the cupcakes have cooled, scoop out a portion of the inside with a spoon and fill with toffee sauce.

  4. Frosting- Whip 2 cups of heavy whipping cream until thickened. Then add in 3/4 cups sifted powdered sugar and 2tsps vanilla extract. Whip until stiff peaks. (Don’t over whip or the cream gets a yellowish color.)

  5. Top the cupcakes with frosting using a piping bag fitted with a star tip. Option to drizzle some of the warm toffee sauce on top. Enjoy!
